What the white truffle actually is
The white truffle of Alba — Tuber magnatum pico — is the most prized truffle in the world. It grows only in a few corners of northern Italy and Istria, in symbiosis with oak, poplar, hazel and willow roots. It cannot be cultivated. It is found by trained dogs working with experienced hunters, almost always at dawn or after dark.
The Langhe is the white truffle's spiritual home. The annual fair in Alba, the Fiera Internazionale del Tartufo Bianco, runs every weekend from early October to early December and is the world reference event for the truffle.
Joining a real truffle hunt
We work with a small group of local truffle hunters — trifolau — who take guests with them on real hunts, not staged ones. A typical hunt happens at dawn or just before sunset, in a wooded area about twenty minutes' drive from Villa Sorì. You walk with the hunter and the dog, off the path, for roughly ninety minutes.
Sometimes you find a truffle. Sometimes you don't. That is the point — the hunt is a real activity, not a guaranteed photo opportunity. When the dog finds something, the hunter digs it out by hand with a small spade and lets you smell the earth where it sat.
The Alba truffle fair
The Fiera del Tartufo in Alba is fifty minutes from Villa Sorì. It runs Saturdays and Sundays from early October to early December, in the centre of the medieval town. The main hall is a covered market where the season's truffles are graded, weighed and sold. Around it: tastings of Barolo, Barbaresco and Alta Langa sparkling, regional cheeses, agnolotti, hazelnut everything.
We recommend going on a Saturday morning, arriving at opening and leaving by lunch, then having lunch in a smaller village on the way back to the house. Saturdays are intense; Sundays are slightly calmer.
Truffle dinner at Villa Sorì
If you'd like a truffle dinner at the house, we can arrange it. A local chef comes to Villa Sorì with the day's truffle and cooks four courses around it: tajarin al burro e tartufo, an egg in carpione with shavings, a risotto, sometimes a dessert. The truffle is shaved at the table by the chef, on each plate, generously.
This usually pairs with a serious wine from the day — a Barbaresco from a small grower, a vertical of Nebbiolo, a Barolo of a vintage that interests you. Tell us when you book.
When to come for truffle
Mid-October to mid-November is the peak — the truffles are at their best, the weather is still mild, and the fair is at full intensity. Late November and December are quieter; you find fewer truffles but more privacy. Avoid the absolute weekend of the truffle auction in Alba unless you specifically want the crowd.
We recommend a four- to five-night stay during truffle season: two hunts spread across two mornings, one fair visit, one truffle dinner at the house, two slow days at Villa Sorì in between.
